Lila is a half full girl!

Tonight I made my first ever gluten free pizza. I cheated a bit and used a pre-packaged mix (thank you Bob's Red Mill!) Lila was a wonderful helper as usual. I was thrilled with her positive attitude toward her ability to eat fewer ingredients than everyone else. I made five separate pizzas so that each could put their own toppings on. There were two different kinds of cheeses (dairy and vegan), nutritional yeast (a good dairy free "Parmesan" substitute), pepperoni (as far as I have found, no pepperoni is garlic free), ham, and assorted veggies. Lila could only have the ham, nutritional yeast and veggies, yet she built her pizza with enthusiasm and kept saying how much she loved ham! That's my girl! I am so happy to finally know what is causing all of our troubles, and even happier that Lila is able to embrace her new diet in a positive light! Plus, I was really happy that the pizza turned out great and even Jeff (the biggest gluten free critic) liked the pizza!

does the Bob's not have the garbanzo bean flour in the pizza mix? we've used that mix before for the two AIM girls who are gluten free and they really liked it . . .. glad she's embracing it, she's probably glad to just be feeling better!
